Ingredients
- 1 medium egg
- 1 cup flour
- 1 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp vanilla extract (if you don’t have vanilla extract, you can also use almond extract)
- 1/4 tsp salt
- 1 cup milk (you can use any kind of milk)
- 2 tbsp vegetable oil (you can also use butter)
Method
- In a bowl (plastic or metal, it doesn’t matter), whisk the egg until fluffy. If you’re using a stand mixer, whisk on medium.
- Combine all the dry ingredients in a separate bowl.
- Add the milk and the vegetable oil to the egg and combine.
Tip: just combine quickly with a fork; you don’t need to mix this. - Add the dry ingredients all at once. Mix everything together, but only until combined. If the batter is lumpy, that’s really OK.
Tip: Don’t overmix the pancake batter! - Now heat your skillet or cast iron pan over medium-high heat. Wait until the pan is completely hot.
- Pour the batter into the pan. I use about 1/4 cup for each pancake. Once the pancakes start to bubble, they are ready to flip.
- The pancakes are done when they are golden brown on each side. Enjoy!
