Ingredients

  • 24 white mushrooms
  • 1/2 cup Boursin cheese
  • 1/2 cup cream cheese
  • 1/4 cup sliced green onions
  • 1/4 cup shredded mozzarella
  • 1/4 cup shredded aged/old cheese
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • Parsley flakes for garnishing

Method

  1. Preheat the oven to 220 °C.
  2. Grease a baking dish or tray large enough to fit 24 mushrooms.
  3. Rinse and drain the mushrooms. Remove the stems and keep the caps. Chop enough of the stems to make about one cup.
  4. Make sure the Boursin and cream cheese are at room temperature before mixing.
  5. Add the green onion, Boursin, cream cheese, shredded mozzarella, mushroom stems, salt and pepper to a medium bowl and mix well.
  6. Scoop the mixture into the mushrooms and arrange them in the baking dish.
  7. Once they are filled and arranged, sprinkle the aged/old cheese over the mushrooms.
  8. Bake for about 10–15 minutes, until the filling is bubbly. Take them out of the oven and let them cool for a few minutes before serving.
  9. Enjoy!
