Homemade mayonnaise

This is one of the best basics for most sauces you make at home. It’s also great on sandwiches or as a dip by itself!

Ingredients

  • 1 1/4 cups vegetable oil (I like sunflower oil)
  • 1 tbsp fresh lemon juice
  • 1 tbsp apple cider vinegar
  • 1 tbsp mustard (I like Dijon, but you can use any kind you like or have on hand)
  • 1 medium egg
  • 1/4 tsp salt
  • A dash of pepper

Method

  1. In a tall measuring cup, add 1 cup of the oil, the lemon juice, apple cider vinegar, mustard, salt and the egg.
  2. Now put your immersion blender in the measuring cup. Make sure the blender is upright and firmly touching the bottom of the cup.
  3. Turn the blender on at a medium/high setting and keep it touching the bottom of the cup. You should see the mayonnaise forming.
  4. Once it’s turning into mayonnaise, slowly pull the blender upwards until all the oil is combined.
  5. Once combined, taste and add more salt or lemon juice if needed. Do you like your mayonnaise a little thicker, or are you using it to make another sauce? Then add the extra ¼ cup of oil and blend again until combined.
  6. Keep in the fridge for up to 7 days.
