Ingredients

  • 4 chicken breasts or thighs
  • 1 medium yellow onion
  • 3 garlic cloves
  • 3 cups chicken broth
  • 1 can sweet corn
  • 1 can cannellini beans (white beans are also fine)
  • 1 can lima beans
  • 2 tbsp lime juice
  • 1/2 tsp oregano
  • 1/2 tsp sriracha sauce
  • A splash of milk
  • Salt and pepper
  • Sour cream, shredded cheddar, cilantro, salsa (these are toppings, so use what you like!)

Method

  1. Start by setting up the crockpot: 5–6 hours on low or 3–4 hours on high.
  2. Now chop the onion and garlic and dump them in the crockpot with the chicken and all the canned ingredients.
  3. Add the 3 cups of chicken broth and the seasoning. Don’t add too much salt because the broth is probably already salted. Mix it all up and let the crockpot do the rest!
  4. In the last 10 minutes, add a little splash of milk. If you don’t have milk or don’t like it, you can skip this step.
  5. Dish it up! Add sour cream, shredded cheddar, cilantro and salsa, or any toppings you like, and enjoy!
  6. You can use frozen chicken: just add half an hour of cooking time and it should be fine!
