Lets start by heating up the skillet, it has to be hot for the best results and for the chicken not to stick.

Mix all the herbs in a bowl, rub the spice mix on the chicken.

Once the cast iron skillet is heated up add the olive oil, put the chicken in the pan.a good pour of olive oil is enough, the pan should be shiny not filled with oil. We are grilling and not frying.

One of the most important thing is to let the chicken grill up! Don’t be hasty to flip it, the chicken will be ready to flip once it doesn’t stick.

The cooking time depends on how thick the chicken is, usually it takes me about 3-5 minutes a side.

Once its almost done take it out of the pan and wrap it in aluminium foil, let is sit and rest for about 10 minutes.
