Potato salad
This is great for family gatherings but also for any weeknight dinners! you can make it in bulk or in smaller portions, and also great to make ahead.

Potato salad
Instructions

Clean an dice the potatoes into cubes, add the potatoes into a pan with boiling salted water. Depending on the potato you use and the size of the cubes your preffer the cooking time can vary, check with a fork if they are tender, then drain and let cool.

While the potato's are cooking finely chop the cellery and red onion.

In a large bowl mix the mayonnaise, greek yoghurt, vinegar, mustard, salt and pepper. Once combined add the bacon bits, onion and cellery.

Finally add the potatos by tossing the bowl, cover and set in the fridge to cool for about 4 hours.When in a hurry you can put the salad in the freezer and stir every 15 minutes until completly cool.

Serve and garnish with paprika and parsley and enjoy!
